“There is a perception in many societies when you are in utero that you're going to be in an environment of low amounts of nutrition, etc. But we're finding now that we're in the land of plenty, so what is becoming epidemic throughout the whole world, not just in the United States or Western culture, are the problems of obesity, diabetes, and increased incidences of cancer. It is a mismatch that appears between what was perceived to be the environment that we are going to live in and the environment we find ourselves in. It is probably one of the first times‐‐or maybe the first time‐‐that's ever happened because usually an overabundance of food is not what our species has encountered.” —Randy Jirtle, PhD September 2010
